Pár náhodně vybraných kulinářských zastavení z posledních týdnů. Z různých důvodů jsem se rozhodla dát si na chvíli od vaření pauzu, to ale neznamená, že sem přece jen čas od času něco nepřibude. Voilá.

A few randomly selected treats from the past few weeks. For a variety of reasons, I decided to take a little break from cooking, yet this does not mean that I will stop updating the blog altogether. Here we go:


I had no choice but to bake cranberry muffins after receiving these irresistible silicone baking baskets from a friend for my B-day. Great for breakfast, they were.


This is hand-made, hand-rolled fresh pasta with herbs and black pepper. A world of difference from its prefabricated cousin, it was delicious with just a little butter and fresh parmasan cheese.



Homemade paté of chicken livers and almonds. Again, incomparable to the stuff bought in stores. Top picture shows it right after being made and finished with a layer of melted butter, bottom picture was taken the morning after when I had it for breakfast.


Another homemade treat - two versions of cheese, one with black pepper and herbs (in the background, out of focus) the second one (my favourite) with dried apricots, cranberries, and rolled in roughly chopped hazelnuts. Simple, delicious, the way to start a day.

A ještě první procházka roku 2009. Stromovka je pořád stejná, ale každý den trochu jiná: tentokrát jí slušel lehký sněhový poprašek, potkaly jsme dva černobílé pejsky, a cestou domů Růža prohnala jednu neopatrnou veverku a pokusila se ulovit dva holuby. Prostě klasika.

And the first walk of 2009. Stromovka is always the same, yet it keeps changing every day we come there: this time, it was adorned with a bit of snow, we met two black-and-white dogs whose company Růža enjoyed, and on the way home, she made an unsuccessful attempt at killing a careless squirrel and tried to herd two pigeons. Classic.
Ještě se vrátím zpět, totiž k večeři, na kterou jsem pozvala pár rodinných známých mezi svátky. Krom toho, že z toho vylezl neobyčejně příjemný, komorní večer plný duchaplné konverzace (aspoň asi do třetí otevřené lahve), jsem byla spokojená i s výsledkem vaření. Recept na polévku jsem našla náhodou chvilku před začátkem přípravy v jedné ze svých kuchařek, a ačkoli jsem od tymiánového vývaru z lesních hub s rajčaty a česnekem neočekávala nic převratného, výsledek mě dokázal příjemně překvapit. Zlatým hřebem večera ale bylo kleftiko: novozélandské jehňátko jsem nakrájela na velké kostky, marinovala je přes noc v mátě, tymiánu, rozmarýnu a olivovém oleji, a nakonec upekla v balíčcích z pečícího papíru. Tenhle trik jsem nevymyslela já. Nedávno mi totiž tuhle dobrotu připravily dvě spřízněné obžerné duše, a výsledek byl tak neuvěřitelný, že jsem ten zážitek prostě musela reprodukovat. Díky pečícímu papíru je jehně udělané úplně akorát - ani pečené, ani dušené, prostě měkkoučké, šťavnaté, trochu křupavé, prostě dokonalé. Jako přílohu jsem servírovala osvědčenou, ač nezvyklou kombinaci grilované zeleniny, tedy sladké brambory kombinované s řepou a zapečené s tymiánem a fetou. Na tenhle zážitek budu myslím ještě nějakou dobu vzpomínat, a rozhodně ho lze považovat za důstojnou kulinářskou tečku roku 2008.

Let's get even further back, to a dinner which I prepared for a few family friends during the holidays. Apart from it being a very pleasant, private evening full of meaningful conversation (until about the third bottle of wine was opened, that is), I was quite happy with the food, too. I found the recipe for thyme and wild mushroom broth just before the dinner and frankly, I did not expect much from it - yet, the result didn't disappoint me as I half expected. However, the star of the evening was the lamb kleftiko. I cut the lamb into large cubes which I marinated overnight in olive oil and herbs, namely mint, thyme and rosemary. Then, the cubes were sealed in little parcels of baking paper and baked in the oven on low setting for a couple of hours. This trick is not of my making - recently, I was served this delicacy by two fellow gastronomy-obsessed souls, and the result was so unbelievable that I simply had to reproduce the heavenly experience on my own. Thanks to the semi-transparent baking paper, the lamb comes out half-steamed, half-baked: it's juicy, tender, yet a little crispy - simply perfect. As an accompaniment, I served a well tried, yet unusual combination of sweet potatoes, beet root, and feta. I think that this was quite a honourable finish to the culinary season of 2008.


Tak. Vrátím se o kousek zpátky, a to sice k letošnímu Silvestru. Z čiré lenosti se mi nechtělo vymýšlet nějaké extrémní kulinářské inovace, tak jsem vsadila na klasiku - totiž nakládané olivy a lososí gravlax. Olivy vznikly ve dvou variantách - zelené jsem naložila s bazalkou, česnekem, slunečnicovými a dýňovými semínky, černé zase s fetou, sezamem a brusinkami. Musím říct, že varianta číslo 2 mi chutnala víc, nejlepší ale oboje olivy byly až skoro týden potom, co jsem je nakládala. Inu, trpělivost růže přináší. Gravlax z lososa mě tentokrát taky potěšil; snad díky vynikající samotné rybě, nebo díky tomu, že jsem na radu ochotného pana prodavače přidala ke standartním nakládacím ingrediencím i vodku, byl výsledek vskutku k sežrání. Silvestra jsem strávila u Lošťáků na chalupě, takže celé obžerství proběhlo v atmosféře klidu, míru a promrzlého českosaského Švýcarska. Není nad to zalézt po procházce do vytopené kuchyně, popíjet svařák a nechat městské starosti spát.

So. Let's go back a little, to this year's New Year's party. My sheer laziness led me to skip any extreme culinary experiments and instead, I went for the well-tried classics - that is, marinated olives and salmon gravlax. The olives came out in two versions; green ones were marinated with basil, garlic, sunflower and pumpkin seeds, while the black ones enjoyed the company of feta cheese, sesame seeds, and cranberries. I must say that I preferred version two, but both batches were at their best almost a week after I put them together. Well, patience pays off, as always with food. The salmon gravlax was a pleasant surprise, too. I don't know whether it was to be attributed to the excellent fish itself, or to the addition of vodka to the standard marinating ingredients (courtesy of a really helpful boy who sold me the salmon and with whom I enjoyed about half an hour of food-oriented conversation), the gravlax came out simply excellent. I spent the couple of days around New Year at a friend's place in North Western Bohemia, so the whole thing was rather peaceful and pleasant. There simply isn't a better way to forget all the city troubles than by enjoying a walk in freezing country and later sitting in a warm kitchen with a roaring fire and a pot of mulled wine at hand...
